Fresh Cherries - Any Ideas?

I have a cherry tree in my garden and we have had a bumper crop this year. Today alone Gav has picked more than any of us could eat.

I've googled fresh cherry recipes and nothing is inspiring me. I'm particularly interested in puddings & crumbles and how to use the cherry juice to make a thick syrup to go in a crumble, with the cherries.

Gav just wanted to eat them all...fresh from the tree, but I don't think my toilet could take the fall out.

Ideas and recipes please.

Southport Cherry Crumble
All I did was stone the cherries (actually Aunty Barb did that job) and freeze them. Then let them defrost slowly, keeping all the juice, sprinkled with a little sugar (cos I don't like anything too sweet), covered with crumble topping and popped in oven for around and hour as they were pretty big trays.

I've done similar before, but it's usually all watery and not very sweet. The recipes I've seen say to add corn flour to give a think syrup from the juice and water. I've never done that before and don't want to balls it up. Have you ever used corn flour in a cherry crumble?

The only problem with fresh cherries if you want to use them to make something is de-stoning them first - it's a bit fiddly and messy. However that is a job for Gav so no worries there eh.

Once cherries are sliced roughly in half and stones removed try leaving them to soak for at least an hour in some suitable alcoholic concoction. You could use cherry brandy I suppose but my favourite is Cassis (a black-current based lowish alcohol sweet tasting syrup, really useful stuff you can chuck it over virtually any fruit and it's a useful mixer drink to boot). You don't need to use that much of it. Then you can either serve the cherries cold or warm them up by just simmering them very gently for a few minutes in a covered pan. Serve with creme fraiche or a dollop of vanilla ice cream

Do you have an ice cream maker? Presumably if you destoned them first, you could just mix them in either fresh or turned into a syrup and then freeze? Never done this, so not sure, but sounds
