I went out mushroom picking with a couple of friends last night, and ended up with 5.5 kilos of chanterelles!
I absolutely love wild mushrooms, but I now need some new recipe ideas. I already have recipes for creamy chanterelle soup, chanterelle quiche and my favourite, which is:
Slice the fresh chanterelles, fry in butter until golden. Add a generous dollop of cream/sour cream/creme fraiche, a dash of soy sauce and some salt and freshly ground pepper. Serve on buttered toast or on buttered brown bread with some rocket. Enjoy!
For a variation on the above, chopped onion and garlic can be added to the recipe.
So, anyone got any great mushroom recipes they want to share?

You could always dry them if you can't think of enough recipe's.

in the past I've had these lightly fried in butter on crispy bread lightly toasted. You don't want anything too fancy .. you want to taste the mushrooms.
Have also had them (among others) with white wine and cream and a hint of garlic served up with fresh home made pasta..
But don't over cook them.. you want some of the Chanterelle texture and taste to come through..

Nope. 'Cus I've already searched for recipes online, and have already seen this page. I wanted to see if anyone's got any recipes they really like to share with me!
I know, the best way is often the simplest recipes, as you don't want to hide the flavour. But they do go very nicely in venison casserole....
But they do have quite a distinct flavour, so it would be nice to try some other recipes than the ones I've quoted above. Oh well, I suppose I'll just have to come up with my own recipes, then....
